Vinification and maturation
Sorting of the grapes, destemming and pressure in a vertical mechanical press, static
clarification at 11 °C.
Fermentation of half of the amount with native yeasts in concrete amphorae and the other half in stainless steel tanks with selected yeasts for 20 days at 18°C. Maturing with the lees in the tank for 6 months

Refreshing acidity in balance with the rich fatty body. Long lasting aftertaste with a phenolic character.
