Maceration for 10 days.

Alcoholic fermentation for 15 – 20 days at 25°C.

Maturation in French oak barrels for 3 months.

Tasting

Ruby color with medium intensity. On the nose, the fresh red and black fruits (mostly bigarreau cherry) are combined with the deep spicy character of the variety like pepper, cinnamon and clove.

Fruity (bigarreau cherry, blueberry) and spicy taste with medium aftertaste and smooth tannins.

Pairing

Combined very well with white meat such as chicken and turkey. Pleasantly paired with raw meat “tar-tare” duck and lamp. Also, it accompanies unique local products such as sausages of Tinos, caper berries and artichokes.
