Attractive canary color tending to a medium deep shade, along with slight silver highlights. Mainly fruity aroma (pear, apple, white peach) but also with distinct yeast notes.

Vinification and maturation
Common vinification protocol of both grape varieties. Static desalination at 11°C. Alcoholic fermentation without pre-fermentation cryoextraction—at 17°C for 20 days.
Aging for 6 months in tank and then for 4 months in bottle.
Tasting
Light pale yellowish, medium depth color. Attractive aroma of citrus peel and fruit, combined with hints of white flowers and white pepper.
Fruity taste, mainly lemony, but also with floral characteristics. It has a good hold in the mouth with a very good aftertaste. Crisp and peppery wine.
Matching
Large-relatively dry-fish (fagri, lithrini, sanagrida), steamed mussels and saganaki, bubbles, stone pipes, flounder, stewed octopus, chicken with mushrooms, gopher, melanuri, sargos, scorpina on coals.
