Grapes from the privately owned vineyard, harvested at the beginning of September. Burst and juice extraction in a pneumatic press.

Fermentation with selected yeasts for 20 days

Aging on lees for 6 months

Tasting

Relatively pale and straw yellow. Light aroma of salty sea stone, a subtle sensation of sea salt, lemon zest and black pepper. The taste is lemony and crisp and “rests” on a mineral background. Very interesting aftertaste, with peppery and mineral tones.

Flavor Combinations: hard feta cheese from Kalavryta, Tripoli and Kefalonia, taramo salad and eggplant salad, raw shellfish, smoked fish, some large fish grilled on coals (sea bream, bream, flounder, fagri), Cretan pork apaki.
