Vinification and maturation
Grapes from the privately owned vineyard, harvested at the beginning of September. Destemming and juice extraction in a pneumatic press.
Fermentation with selected yeasts for 20 days
Maturation on lees for 6 months
Tasting
Relatively pale and straw yellow. Light aroma of salty sea stone, a subtle aroma of sea salt, lemon zest and black pepper. The taste is lemony, crisp and mineral. Very interesting aftertaste, with peppery and mineral tones.
Pairing
Flavor Combinations: hard feta cheese from Kalavryta, Tripoli and Kefalonia, fish-roe dip and eggplant dip, raw shellfish, smoked fish, some large fish grilled on coals (sea bream, bream, flounder, fagri), Cretan pork apaki.
