Distillation of Cycladic grape varieties from Monemvasia, Assyrtiko, etc. Slow and controlled fermentation at a low temperature to preserve the primary aromas as much as possible. Emphasis is placed on slow distillation (12-hour cycle) and strict separation of the heart as well. Aging before bottling for at least 6 months. Quite aromatic and complex, with their characteristics representing the Cycladic land.
