Vinification and maturation
Common vinification protocol of the varieties. 12-day maceration. Alcoholic fermentation for 15 days at 25 °C. Maturing with the lees in tanks for 6 months.
Aging in the bottle for 3 years.
Tasting
Medium deep ruby color.
Spicy and herbal aromas of Mavrothirikos are followed by the ripe fruit of Mavrotragano and Mandilaria.
Medium-bodied with a good fruity feel surrounded by round tannins. Very nice and robust mouthfeel, with long-lasting aftertaste.
Pairing
Accompanies lean meat and game. Excellent wine for fish: large fatty fish cooked with red sauce in the oven, called “plaki” or on coals. It pairs with large shellfish cooked in red wine sauce.
